Cherry tomatoes
Although very small, they are full of nutrients, and are an excellent choice for an appetizer and for a salad. The cherry trees are unique and grow exclusively on the island. It is deep red in color and the outside is somewhat hard, unlike the inside which is juicy.
White eggplant
A local variety that does not absorb oil because it is not irrigated, it is juicy, sweet, and has a healing taste.
Split peas
A special legume grown in Santorini is also a tasty appetizer. According to the archaeological findings of the Bronze Age city of Akrotiri, fava cultivation has been consistently and exclusively developed on the island for more than 3,500 years.
Kopania
If you are looking for inspiration in its traditional local cuisine, then Kopania deserves your attention. They are usually made in small rolls from barley nuts, raisins and sesame seeds. It is a very simple tasty delicacy and at the same time it is healthy and nutritious. If you want to eat something sweet but avoid fats then Kopania is the answer.
Chrysanthemum
It is a local variety of cheese of very limited production, which you will not find elsewhere in Greece. Chlorophyll is spread on slices of bread or mixed into salad.
Santorini tomato meatballs
One of the most favorite appetizers you can try is Santorini, which consists of Santorini tomatoes, basil and mint. They have a distinct aroma and a unique taste that will surely whet your appetite before the main meal.
Katsuni
It is larger than the common cucumber and has thicker skin and more seeds. If not harvested in time, it becomes sweet and tastes like a melon! Katsouni is special for Santorini because it only grows on the island. It has a lighter, cooler taste than regular cucumbers and is a staple in local salads.
Melitinia
They are sweet treats offered at various celebrations as well as weddings. They are made with salted mizithra and yogurt, which are then flavored with mastic. You can find them in the traditional bakeries of Santorini.
